Northern Icelandic experiences

North opened its door in August 2022 with the aim of delivering a unique and memorable experience of Iceland.

At North, we focus heavily on Icelandic ingredients, especially the ones coming from the North.

Founding chef Gunnar Karl Gíslasson is at our helm prepared to explore the vast and multi-faceted Icelandic countryside with you and deliver a procession of dishes that one might say is as predictable as the Icelandic weather.

 At North, we endeavor to respect all the raw materials that come to us, no matter how big or small, and utilize everything. Each thing grabs our attention and we do everything to make use of it.

Gunnar Karl Gíslason is the founding chef behind Dill, which was the first restaurant in Iceland to receive a Michelin star. He is also the author of North: The New Northern Cuisine of Iceland. In this episode, we trace Iceland’s food traditions through the individuals that are helping to keep them alive.
